Made with no milk, no egg, no nuts? You bet!

But heck, this is a great single cake for anyone wanting a quick snack. No allergies needed.

TOP TIP FOR MUG CAKE

Since we make these single serving cakes to take to birthday parties, I actually like making ours in ramekins. It’s a little more discreet than a mug with a handle, and my kiddo prefers that. This recipe works perfectly in our 6-ounce ramekins. But of course, mugs are always fun at home!

It was nine in the morning. Skating birthday party at ten.

Wrap gift. Make card. Get breakfast done.

Pack lunches for the predictable pizza fest that would ensue in the next couple hours for a bunch of 10-year-old boys.

But not my boy.

He’s allergic to milk, and I have to make his own safe food. Always.

Then it hit me. Did hubby make cupcakes?!

Crud, we forgot to make safe cake!

Now it’s 9:15 am. Thirty minutes to show time.

Think. QUICK!

It was time to revisit the microwave mug cake idea.

I’d been wanting to create this recipe forever.

Andthere was no better time than the present.

So I pulled up our dairy and egg free cake recipeandstarted cutting down the measurements bit by bit.

Tweaked a little here, tweaked a little there.

And kept tasting the batter until it was good to go.

No milk, no egg. We got this!

I grabbed a six ounce ramekin from the cabinet, threw in the batter, and had cake in a minute.

Thankfully, we had some canned icing in the pantry.

Then after icing (and sprinkles, of course), I put the ramekin into a small plastic container with a lid. And off we went!

The kids had a blast at the party, of course roller-skating was the highlight…not the food.

But kiddo really loved his discreet, single-serving, allergy-friendly cake.

Wished we had done this sooner!

This recipe is a winner, especially for cake-on-the-go for food allergy families.

Now we love having this recipe on hand so the kids can make cake whenever they want!

If you don’t have frosting in the house, a little powdered sugar sprinkled on top will do just as well.

Or sprinkle with chocolate chips before you microwave.

MICROWAVE MUG CAKE RECIPE DAIRY & EGG FREE

Use a ramekin or mug that holds at least 6 ounces and is microwave safe.

MUG CAKE INGREDIENTS

4 tablespoons flour
1 tablespoons sugar
1 tablespoons cocoa powder
pinch of salt

1/8 teaspoon baking soda
1/4 teaspoon vinegar
3 tablespoons water
1/2 tablespoon vegetable oil
1/2 teaspoon vanilla

HOW TO MAKE MILK & EGG FREE MUG CAKE

Grease a ramekin or mug, that holds at least 6 ounces, with dairy-free butter.

In the ramekin, mix the first four ingredients with a fork.

Then add the baking soda. Pour the vinegar over the baking soda, watch it fizz!

Add in the last 3 ingredients and stir everything together well with a fork until the batter is smooth.

Cook the cake, in the mug or ramekin, in a microwave on high heat for one minute.

Let cool and top with frosting or powdered sugar.

FROSTING DAIRY & EGG FREE

During the depression, our grandmothers just sprinkled this cake with powdered sugar.

Or you could easily sprinkle chocolate chips on top before microwaving.
